If you want stone, consider it on the island or the main prep run only and laminate elsewhere — a mixed-material worktop is a normal specification, not a compromise.
It is also worth asking whether you need a full replacement at all. Where carcasses are sound and square, replacing doors, drawer fronts, handles and the worktop transforms the room for substantially less than a new kitchen. Any competent installer will price both options if you ask for them side by side.
